Welcome

So glad you're here! I hope you’ll poke around and check out what we are all about! Monthly Dirt will be my way of sharing our farm with you, favorite recipes, health tips, and amazing ways to make our community and world a better place.

Our little farm has yellow butterflies (a sign of happiness and my favorite), monarch butterflies, birds of all kinds, and serenity. It’s magical in the early morning hours as the world is coming awake and dew is fresh on the grass and leaves. I’m so glad you’re along for our journey and evolvement of our olive farm.

Let’s take a walk around the land - beyond our olive grove, you can take a walk down Pecan Lane, climb the treehouse, listen to wind chimes, you’ll also find bamboo, blueberry bushes, wild dill and fennel, a tulip poplar, and various other deciduous trees including a live oak, which will be a climbing tree when it gets bigger.

Our mission is to give back to the land so she can prosper and thrive for us and many generations to come! We are passionate about planting trees like there is a tomorrow. We like breathing the good air, and going at a slower pace out here. You’ll find us at farmers’ markets sharing our love of olives, or come take a walk and visit the trees for yourself.

“Unless someone like you cares a whole awful lot, nothing is going to get better. It’s not” - Dr. Seuss

Until next time, here’s a favorite recipe of mine using our unique, flavorful olive oil potent in polyphenols and rich in antioxidants to draw out the flavor of the salmon and greens.

Foil baked salmon

Here’s what you'll need:

-Salmon fillets

-Seasoning of your choice - my favorite blend is smoked paprika, Italian seasoning, black pepper, Himalayan pink salt, onion powder, garlic powder, and cayenne pepper (the smoked paprika makes it!)

-Lime juice

-Flavorful olive oil (ahem, DeepRichDirt Olive Oil from our Orchards)

What to do:

-Preheat oven to 450 degrees

-Cut squares of aluminum foil, lay salmon fillet on foil. Squeeze lime juice onto salmon and then rub in seasoning mix. Give it a good drizzle with olive oil and then fold into a nice pouch. Continue with all your fillets.

-Pop in the oven for 11-13minutes

Voila! Serve with fresh veggies and salad (arugula is our absolute favorite!) drizzled with olive oil.

All my best,

Amanda
